If one wants to rent in FV for 3-5 months over the Winter what amount of rent might be usual for a 2-3 bed place with a pool and sea views?

Waggy, I would reconsider the pool and sea view in FV during the winter period:
Pool: We find our (heated) pool doesn't get above the 26 degrees during the winter months.
Sea view: The air temperature and the sun are great during the winter period. The wind is often very chilly.
The problem with a sea view is that you can be extra prone to the chilly winds.

Thanks eric_tonny: I try not to swim - I reckon it's for people who are drowning, but my Mrs even swims in the sea during the Nov- Feb period when we usually holiday in FV.
I guess even a cooler FV is warmer than the UK when you've just flown over; but our last Feb hol there was bl@@dy cold.
