We will be arriving into Corrajelo late Sunday evening probably about 9pmish

We will need to grab some quick groceries and / or a meal, where will be open at that time on a Sunday???

Snowdrop

Dino's supermarket in Campanerio open till 10.  Bars/restaurants there till later.  Also the little supermarket next to flintstones bar by Campanerio and opp new bus station.

If you are arriving in Corralejo about 9pm, I assume you will be arriving at the airport at maybe 7pm or so. I would suggest taking a slight detour & going to the supermarket in the centre of Caleta first to get what youeed. It will still be open at that time & will only mean a half hour delay on your arrival to Corralejo.

Or even less of a detour and go to Mercadona near Ikea about 4/5 K from the airport.

My reply was on the assumption that they were not driving.

I suggest you take something with you that will trave OK like a packet of beanfeast and some rice or pasta.  If you are delayed nothing will be open even if you are driving.  You can buy water etc from a bar.

Portseven. You asked about where to eat, if arriving late. Buen Viaja restaurant behind the DISA garage, opp Ikea El Matorral is open until 2am everyday.
Always useful for a quick meal before travelling to your destination. Good view of the runway!
Some items also for sale in the DISA kiosk.

Buen Viaja restaurant it has been closed for more than a week, did not check today but the rumour is it is that no rent has been paid since the place opened.

Yep driving with Pluscar so hopefully quick out of the airport

I suspect we will be popping in one of the Hiperdino's en-route from the airport to get a few essentials, then big shop are mercadona on the Monday

To be certain that you get the basics I would call into the petrol station  on the roundabout after you leave the ring road. They should have water, bread, butter and something to make a sandwich plus coffee.
