Tamara, that's another superb blog and set of pictures, and really inspiring.

Is the line you walked the same as the GR131 leg from La Pared to Risco del Paso, or does that run further inland?

The GR131 runs quite a bit more inland, and only comes reasonably close to the shore in two or three places, never going down to that ledge we walked at all.

My guess is they didn't want to mark an "official" footpath so close to the shore so as not to be held responsible for any accidents.
