Title: Cafe leche leche

Hi guys could anyone tell me how to make this Fuerte speciality?  Also the coffee with the milk sitting above the coffee ie black and white what is that called?

For leche leche put condensed milk in a glass, pour coffee over it then add milk. The condensed milk will stay seperate till you stir it. (leche leche = 2 milks  :) )

Sorry, forgot to say it's better if you fill it with hot milk. And we find the tubes of condensed milk are less messy / sticky.

Cortado derives from the word "cut" and is a small coffee made with a strong infusion of ground coffee beans with a little milk. It's about half the size of a cafe con leche but carries the same punch

Best made with "espresso" style black coffee [cafe solo] and steamed milk,  so you really need a pucka pressure coffee machine to make them at home.

They are always good in Padilla.

Now - if you want a cortado less sweet, i.e. without the condensador, it is a cortado lekida [not the correct spelling I'm sure, but that is its phonetical pronunciation]

You can also get large cortados  -  cortado largo, which is a double shot of the above

Do you mean a Moka, where you put water in the base and coffee in the middle basket?

Steamed milk is necessary - so you need to be able to do that to get it right

Good idea - "REAL" coffe at home is one of life's luxuries. The start at 35,00 Euro and go up to 600,00 Euros so take your pick.

Next though is finding coffee beans that you like - medium or strong, best to experiment

An entry level Gaggia Classic will be the minimum machine , costs about £170, the type I use is a Fracino Heavenly, about £750. Then a good burr grinder is a nice to have. Beans from coffee-direct, I recommend Golden Crema to start off with. Condensed milk in coffee? you heathen Spike. You will be telling us that Maxwell House is coffee next.

I never came across LECHE LECHE on the Peninsula, it seems peculiar to the Canaries. Too sweet for me, I don't even take sugar, but Majoraros seem to have a very sweet tooth

We just got a Delonghi bean to cafe. You put the beans in the top, it grinds them, heats the water at very high pressure and makes the black coffee to the strength required. All you then do is use the steamer to heat the milk. Bit expensive but a real treat

Heat a shot of Liqueur 43 with a teaspoon of sugar add just after the condensed milk and before the coffee. It is called a barachito. Have seen some people manage to keep the 3 layers separate but have never managed it myself.
